This recipe is so easy to make, it is a nutritious veggie and chicken soup that feels like a warm hug from Mother Nature!
Let me start by saying that this soup is a compilation of my favorite vegetables, please feel free to add or omit any of them. The purpose of this soup is to make you feel good, healthy, and loved.
First step for this easy to make, nutritious veggie and chicken soup
Take a quick trip to your local grocery store and select fresh ingredients, organic and locally grown if possible. Your taste buds will thank you later.
Quality ingredients is key for flavor and nutrition
Here is the list of ingredients. I use about a cup of each, but you can adjust to what you have available and to your liking.
Onions, carrots and celery. Yes! It is the famous french seasoning base called mirepoix and I use it for this soup and many other dishes. I mean who am I to question fine cuisine traditions, and why not do what the experts do.
Garlic. For its flavor enhancing superpower, but also for the jam packed benefits it has. From boosting immune system, helping with lowering inflammation to supporting and protecting heart and brain health.
Mushrooms. Filled with antioxidants, vitamins and minerals and also give depth to both the flavor and the texture of any dish, but specifically this soup.
Broccoli and cauliflower. These hearty bouquets of nature are so nutritious and are filled with antioxidants and fiber. They are hardier than most vegetables giving the soup great consistency and texture.
Potatoes. I used baby gold potatoes, peeling off any blemishes and dark areas, but for the most part leave the skin on them for the added fiber benefits. In general potatoes are also a great source of potassium, other vitamins and minerals. Due to their high glycemic load, I don’t put as much potatoes as I would like to, but I find they add to overall favor and hardiness of the soup.
Spinach and Kale. These are dark leafy greens, which means they are loaded with hearty goodness like vitamins A, C and K and minerals including folate, iron and more. They are so nutritious.
Making this soup is the easiest
Basically, chop all the vegetables and cook them in large pot of water with chicken, salt and pepper, for about 30 minutes or so. It is seriously that easy.
Ok, okay, here is a bit more detail…
In a large pot, on the stove top, over medium heat, add a couple of tablespoons of vegetable oil and sauté the onions, celery and carrots to make your soup base. Add the garlic (minced), mushrooms, salt, and pepper. If you like extra chicken flavor add some chicken boullion. When mushrooms have started to cook, add the chicken pieces. I prefer bone in thighs. Mix with a large spoon allowing the chicken to sauté for a bit. Add water to the pot and finally add the other vegetables and potatoes. Cover pot and let it simmer for about 30 minutes until the potatoes and chicken are fully cooked. Voila! You now have an easy to make, nutritious veggie and chicken soup.
Depending on the flavor profile you are going for, you can add some of your favorite herbs or seasoning combinations. Remember that a little bit of dry herbs go a long way, so don’t go too crazy with them. My favorite is Herbs de Provence, it gives the soup such a cozy and familiar feeling to it. mmm love it.
